Recently, Stephanie of A {Modern} Christian Woman, posted a host of delicious buffalo recipes. This gave me a hankering for some buffalo-something-or-other myself, so I decided to make buffalo chicken tenders.
Yield: 3 dozen tenders
Ingredients for the tenders:
Preheat oven to 425 degrees. Coat chicken with oil, salt, and pepper.
Place on a lightly greased baking sheet or oven casserole dish and bake at 425 degrees for 15 minutes (20 minutes per side if you are cooking wings with bones). Turn, then bake another 15 minutes.
While the tenders are baking, make the buffalo sauce.
Ingredients for the buffalo sauce:
- 1 T vinegar (I use red wine vinegar, but you can use any kind you like.)
- 1/4 t cayenne (or more if you like heat!)
- 1/4 t worcestershire
- 6 T hot sauce
- 3 T butter, melted
(I doubled this recipe to have extra for a dipping sauce.)
Remove tenders from the oven, place in bowl, and coat them with the sauce.
Increase oven heat to broil. Place chicken back in the casserole dish or on a broiler pan. Broil for 10 minutes more or until they reach desired crispness.
Serve with your choice of dipping sauce and celery stalks.
Great for a snack or as a main dish with some sides!
